For the pancakes, mix the buckwheat flour and the whole wheat flour with water, milk and salt. Mix the eggs, fold them in and let the dough rest a little. Add vanilla sugar if desired. Toast the pancakes in hot fat and sprinkle with raisins. Add the maple syrup.
