fresh basil leaves (mass like parsley) 3-4 tbsp. tbsp. olive oil.
Finely chop onion, parsley and basil and sauté in olive oil. Blanch (scald) tomatoes, skin, remove seeds, chop coarsely and put in a saucepan. Add pepper, salt, cinnamon stick and sugar, steam for about 15 min until you get a creamy sauce. Season with vinegar. Serve : with boiled meat or fish.
