For sausage with onion sauce, cut onions into narrow strips. Sauté in melted butter for 5 min. over medium heat so that they color slightly. Add curry ketchup and 200 ml water. Stir in roast stock, bring everything together to a boil and simmer gently uncovered for 5 min.
Fry sausages in hot oil for 5-6 min over medium heat. Season the onion sauce with salt, pepper and cayenne pepper.
Serve bratwurst with onion sauce and sprinkle with chive rolls.
