For the smoked salmon on spinach leaves, first defrost the spinach.
Peel and finely dice the onion.
Heat the butter in a pan, sauté the onion until translucent, add the spinach, season with salt, pepper and nutmeg and sauté for approx. 7 minutes.
Meanwhile, whisk the mayonnaise with the orange juice, mustard and dill.
Cut the salmon into strips.
Lay out a bed of spinach on a sideboard.
Arrange the smoked salmon on top and drizzle with the sauce.
