For the potato goulash, sauté onion in a little hot oil. Add paprika, water, salt, vinegar and diced potatoes and grated carrot and simmer covered on low heat until potatoes are very soft and a creamy sauce is formed.
Slice the sausages, add them and let them heat up briefly.
Serve the potato goulash with two slices of farmhouse bread.

For those who like it a little spicier: mix chili powder or hot paprika into the potato goulash.
