Peach ice cubes The day before the party, cut 2 ripe peaches crosswise and blanch in boiling hot water for 30 seconds. Remove, rinse and drain. Skin, halve and pit peaches.
Cut peaches into coarse pieces and mash finely with 1 tbsp juice of one lemon and 1- 2 tsp confectioners’ sugar. Fill into an ice cube tray and freeze for one night.
Cold duck: Peel 6 narrow strips from 1 untreated lemon with a peeler. Shape into 6 champagne glasses, fill one-third full with 300 ml ice-cold dry white wine and steep for 10 min. Form 1-2 peach ice cubes in each glass. Fill the glasses with 300 ml of ice-cold dry sparkling wine.
