For the crispy cheese börek, prepare the filling. To do this, crumble the feta cheese between your fingers and mix with the freshly chopped herbs. Season to taste with a pinch of ground spice of your choice.
Carefully separate the yufka dough sheets from each other. Brush 2 sheets at a time with melted butter or oil and cut the dough into larger even triangles. Now apply some filling on the longest side of the triangle and shape the triangle into a roll towards the tip. Fold the ends in slightly so that the filling does not escape.
Heat some oil in a deep pan and fry the böreks in it until golden brown on both sides. Remove with a slotted spoon and drain on kitchen roll. The crispy cheese börek goes well with spicy yogurt and salad.
