For the kamut buckwheat pasta, grind the grain very finely or buy ground, knead with the remaining ingredients a not too firm dough. Twist in plastic wrap, let rest for an hour.
With the help of a pasta machine make fine ribbon noodles, or roll out thinly with a rolling pin and cut any noodles. Boil gently in salted water for 2-3 minutes, toss in olive oil.
