Warm butter in a large frying pan, sauté onion and garlic. Add peas, steam briefly, add water, bring to a boil, reduce temperature, simmer gently for fifty minutes, stirring occasionally.
Add potatoes and all ingredients up to and including celery, simmer on low heat for another fifteen minutes.
Add ribs, simmer soup on low heat for about fifteen minutes, season.
