For the pear compote with marzipan, peel the pears and cut them into small pieces.
Put the pear pieces in a saucepan with water and white wine together with sugar and cinnamon and cook until done.
Bind with a little wheat starch and add a piece of marzipan.
Form the remaining marzipan into balls and roll in cocoa. Garnish the pear compote with marzipan with amaretti cookies and a mint leaf.
