For the apple pie with snow cover, roll out the shortcrust pastry and place it on a small baking tray lined with baking paper or in a round baking pan (28 cm diameter) and bake. Meanwhile, steam the peeled and coarsely grated apples with the raisins and very little water. Add the sugar and cinnamon and a dash of rum and stir well.Spread the finished dough with a little apricot jam and spread the apple mixture on top. Beat the egg whites with granulated sugar until very firm and spread over the apples or spread with a piping bag.
