For the apple champagne cake, first prepare the shortcrust pastry. For the short pastry, knead together flour, 75 g sugar, baking powder, butter and egg and chill for 15 minutes.

Brush the baking pan with some Rama, roll out the dough, place it in the pan and pre-bake briefly in the oven at 175 °C. For the filling, bring the sparkling wine to the boil, remove from the heat, add the chopped apples and bring to the boil briefly.

Add the vanilla pudding (mixed with a little sparkling wine or mineral water) and bring to the boil again, allow to cool and pour into the shortcrust pastry-lined cake tin.

Bake at 175 °C for about one hour and let cool. Spread the cooled cake with whipped cream.

Preparation Tip:

You can also prepare the apple sparkling wine cake with a little less sparkling wine and mineral water instead.
