Melt butter in a large saucepan. Remove from heat, sprinkle with sugar and a pinch of salt. Later, stir flour into the cooled liquid butter with a wooden spoon. Fold in to the yolks until a homogeneous dough mixture is formed. Form the dough into a ball. The best way to roll out the dough is to place it on parchment paper, then press it a little flat with your hands.

Cover dough with plastic wrap, then roll out with a pastry roller until large enough to line a round baking sheet. The plastic wrap will keep the dough from sticking to the roller.

After rolling out, remove the plastic wrap, then place the dough in the pan with the parchment paper.

Press edges smooth with the back of a fork. Prick dough several times with fork.

Remove peel from 7 apples, cut off. Melt butter, sauté apple pieces in it, sprinkle with sugar. Add Calvados. Sauté at a moderate temperature until apples are soft.

Remove peel from remaining apples, cut in half, remove cores. Spread thin apple slices on the dough base. Spread cooled compote evenly over it. Place remaining apple slices on top. Bake in the oven for about 30 to 40 min at 200 °C.

In a coated large frying pan, dry roast sunflower seeds with flaked almonds, stirring throughout. Like this
