A simple but delicious cake recipe:

Beat egg yolks and sugar to a pale thick cream. Perfume with Baileys. Stir in egg whites and cream.

Line a coated cake pan with plastic wrap. Pour in Baileys cream and freeze for at least four hours.

Remove the peel from four oranges like an apple, i.e. with the white skin. Cut the orange slices from their separating skins, squeeze the remaining oranges.

Boil the orange juice, sugar and port wine until syrupy. Add the orange fillets on top and cool.

To serve, cut the parfait into slices, arrange and garnish with orange fillets and the sauce.
