FOR THE FLECKERL (or about 200 g ready-made Fleckerl):










Instructions:

For the Fleckerl, first knead a smooth pasta dough from flour, egg, egg yolks, salt and water. Correct dough consistency with water or flour as needed. Roll out thinly on a floured work surface and cut into small squares. Allow to dry. In a large pot, bring plenty of salted water to a boil and cook the patties in it for 3-5 minutes until al dente, but never too soft. Strain, rinse in cold water and drain well. (Cook purchased Fleckerl according to instructions.) In a bowl, cream room-temperature butter with eggs, egg yolks and a pinch of salt until fluffy. Cut ham into small cubes and mix in. Beat the egg whites with a pinch of salt until stiff and mix with the sour cream, whipped cream and the cooked dumplings. Mix everything gently and season with salt, pepper and nutmeg. Pour the mixture into a well-buttered dish and sprinkle with breadcrumbs and freshly grated Parmesan cheese. Spread some butter flakes on top. Bake in preheated oven at 180 °C for about 45 minutes. Lift out, portion and arrange on preheated plates.
