Instructions:

For the banana slices, beat the whole eggs with raw sugar and vanilla sugar until foamy. Then slowly add the oil and water. Mix spelt flour with baking powder and unsweetened cocoa powder and fold in.

Spread the dough on a baking tray lined with baking paper and bake at 180 degrees for about 30-35 minutes. Then let the dough cool on the tray.

In the meantime, prepare the cream. To do this, make a custard from soy milk and allow to cool. Stir again and again so that no skin forms. Now whip the whipped cream until stiff and fold into the cooled custard.

Warm the currant jam slightly and spread on the cocoa base. Peel bananas, sprinkle with lemon juice, cut into slices and spread on the base. Pour custard over everything and spread.

Prepare a glaze from cooking chocolate and coconut fat, spread it on the cake and garnish with sugar sprinkles. Leave the banana cake to set in the refrigerator for a few hours, preferably overnight.

Preparation Tip:

Of course, you can also prepare the banana slice with normal whole milk. Soy milk needs a little more starch or custard powder to make it firm.
