For the bean sprouts from the wok, first rinse the bean sprouts in a sieve and drain well.

Wash the spring onions, cut them into rings and separate the white parts from the green ones.

Keep the three slices of ginger and the peas handy.

Heat the wok over high heat, pour in the oil and toss.

Stir-fry the white parts of the scallions, then add the ginger.

Add in the bean sprouts and stir-fry for 3 minutes at a good temperature, stirring and turning throughout.

Sprinkle the salt on top and add the peas and green rings of scallions.

Also continue to stir-fry for about 3 min.

Season the bean sprouts from the wok with soy sauce and salt and serve hot and crisp.

Preparation Tip:

To make your stir-fried bean sprouts more colorful, you can add a red bell bell pepper , diced small, to the recipe.
