For the filling, dice the bacon and chop the gherkins. Mix with all other ingredients for the filling. Beat cutlets, season with salt, season with pepper. Cover meat with filling, roll up and fix with roulade needles (or toothpicks). Lightly flour the roulades. Heat oil in a frying pan and sear roulades on all sides. Remove roulades, sauté onions in the drippings, deglaze with soup. Add capers and mix with a hand blender. Pour in soup, add mustard and roulades to the sauce and bring to a boil. Steam in a Kelomat or regular saucepan until tender. Thicken juice according to consistency with a little flour mixed in water. Serve the roulades with the sauce.

Serve with spiral noodles or long grain rice, broccoli roses as garnish.
