For the Berner Einspänner, slice the sausage lengthwise with a sharp knife without cutting all the way through. Cut the hard cheese so that the sausage can be filled with it. Fold up and wrap the sausage tightly from one end to the other with bacon slices. Pin sausage and bacon together with two toothpicks if needed.

Brush a coated skillet with a little oil and fry the one-piece in it all around until the bacon is golden brown and the cheese has melted underneath. Serve the Berner Einspänner in a roll with mustard or ketchup.
