For the blueberry cream, soak the gelatin in cold water. Wash 250 g of the blueberries, puree and strain.

Squeeze the lemon and add the juice together with sugar. Bring 65 ml of water to a boil.

Dissolve the squeezed gelatine leaves in the boiling water, allow to cool briefly, then stir carefully into the berry puree.

Whip the cream until stiff, fold in two thirds of it. Pour the berry cream into 4 glasses and place in the refrigerator garnished with the remaining whipped cream.

Serve the blueberry cream decorated with a few fresh blueberries and a mint leaf.

Preparation Tip:

Instead of a blueberry cream, you can use this recipe to make a cream with another type of fruit.
