Instructions:

Season the boiled beef with salt, pepper and sear on all sides, then add the chopped root vegetables and onion and fry briefly, fill with water and add the spices. After bringing to the boil, simmer gently until the meat is tender, then drain the soup.

If you want to use the meat later, you should put it in a container with cold water – this way it will stay nice and tender for a while.

For the dumplings, pour milk over the breadcrumbs. Sauté the onion in butter and mix well with the grated cheese and eggs, season with salt, pepper and nutmeg (freshly grated). Form loafs from the mixture, turn them in breadcrumbs on the other side and fry them in butter on both sides.

This soup can be served together with the meat as a main course.
