For the breaded melanzani, wash and dry the melanzani and cut into slices about 1 cm thick. Lightly salt the slices. Whisk the egg with the milk in a bowl.
Peel the garlic and press it into the egg-milk mixture. Dredge the slices in flour, then in the egg-milk-garlic mixture and coat with breadcrumbs.
Fry the breaded slices in hot vegetable oil, then drain them on paper towels.
