Instructions:

Peel and finely dice the onions. Rinse parsley and chop finely. Mix both with 2 tablespoons olive oil, 2 eggs and the spices. Cut out eight squares from the dough with an edge length of about 15cm. Form a good spoonful of filling on one corner, fold the dough over it to form a triangle, brush the edges with egg white and press together well. Heat oil in a frying pan and pour in the brioche. Bake for about 5 minutes on each side until golden brown. Drain on paper towels and bring to table hot on the spot.

For the variation:

Mix the lamb mince at the beginning with the onion cut into small cubes, and salt and pepper. Knead the mixture well! Later, fry the minced meat in olive oil in a frying pan. Then remove the frying pan from the stove, fold in the cheese and let it cool down. Put a spoonful of minced meat mixture on one corner of the dough squares, then press a bulge into it and put an egg yolk on it.
