For the cabbage, cut the larger heads into four, the smaller into two, remove the outer impure leaves and wash the cabbage.

Cook the cabbage in enough salted water and rinse it in a colander with cold water. Squeeze well and cut into small pieces.

Heat butter or other good fat and brown two small cooking spoons of flour in it. Deglaze with stock and season with nutmeg, salt and pepper. Boil everything down a little more until the cabbage has a mushy consistency.

Preparation Tip:

The cabbage is best served with beef, chops or sausages.
