Instructions:

For the cauliflower-pea gratin, wash the cauliflower. Cut the roses into small pieces. Cut the potatoes into slices.

For the glaze, mix well the milk, yolks, herbs, beef broth, garlic granules, nutmeg, cornstarch and pepper.

Cut the ham into small cubes. Butter an ovenproof dish. Mix the potatoes and cauliflower with the ham and spread in the dish. Pour the glaze evenly over the top. Top with the cheese and bake at 200 °C top/bottom heat for about 25 minutes until the cheese is brown. Serve the cauliflower and potato gratin.

Preparation Tip:

If possible, use fresh herbs for the cauliflower and potato gratin.
