Instructions:

Bring salted water to a boil, pour in rolled barley and cook. Do not make cauliflower too soft.

Prepare a sauce from fat, flour and liquid, season heartily with spices, add egg yolk and fold in the snow. Form half of the rolled barley in a gratin dish, then the vegetables and half of the sauce. Top with the rest of the rolled barley and the rest of the sauce.

Sprinkle with grated cheese and breadcrumbs and add flakes of fat.

Bake in the oven at 225 °C for about 35 minutes.
