Remove leaves and bad spots from the cauliflower heads and cut the stalks into small pieces. Divide cauliflower into small roses, rinse, drain. Peel and finely dice onions and garlic. Peel, rinse and cut potatoes into 2 x 2 cm pieces. Peel, quarter, core and dice apples as well.

In a large saucepan, heat the oil and gradually sauté the garlic, onions and ginger with curry.

Add flour, sauté, add vegetable soup, stir with a whisk and bring sauce to a boil.

Divide the sauce evenly between two pots and add half of the potatoes, half of the apple cubes and half of the cauliflower. Let it boil again, season with half of the paprika, half of the garam, half of the juice of a lemon masala, half of the salt and half of the yogurt. Cover the lid and cook on low heat for about half an hour, stirring occasionally.

Halve the peppers, remove the seeds and the white membranes, rinse and dice. After 25 minutes of cooking, add half of the diced peppers and pumpkin seeds to each saucepan and cook for 5 to 10 minutes.

Tip: Use creamy natural yogurt for an even finer result!
