For the cauliflower in cheese sauce, divide the cauliflower into florets and rinse with cold water. Steam in boiling salted water over low heat until tender, about 15 minutes, then drain.

For the poached eggs, bring water, salt and vinegar to a boil. Stir with a spoon to create a suction, crack eggs one at a time into a ladle and carefully slide into the center of the spinning vinegar water. Poach over low heat for about 4 minutes. Lift out with a perforated ladle and drain.

For the cheese sauce, peel and halve the garlic clove and rub it into a pan. Heat the cream in the pan and add the cheese in pieces. Stir well until the cheese pieces have dissolved. Season with plenty of pepper and a little salt.

Cut ham into strips, finely chop parsley.
