For the cherry patch, place the puff pastry in a cold-rinsed square silicone mold, pull up the edge. Drain cherries over a bowl and mix juice with water as a drink. Separate eggs.
Beat egg whites with one half sugar until very stiff. Whisk yolks, second half of sugar, curd, vanilla sugar and the vanilla custard powder as well.
Fold the beaten egg whites into the curd mixture. Finally, stir in the cherries and spread the mixture on the puff pastry. Bake in the oven preheated to 200 degrees on the lowest rack for about 50 minutes. Sugar the cherry stain before serving.
Preparation Tip:
Sprinkle the cherry patch with chopped pistachios. This adds a splash of color and something crunchy.
