Instructions:

For chestnut pancakes, quarter the pears and remove the core. Fry the pear quarters in a pan with butter, extinguish with white wine, stir in agave syrup, mustard and vinegar and boil down the liquid until syrupy.

Fry the shallot in butter until brown, remove from pan and mix with diced cheese, whipped cream and egg yolks.

Place the pears with the syrup in a gratin dish, spread the cheese mixture over them and cook in the oven at 180° Celsius for about 10 minutes until lightly browned.

For the pancakes, mix eggs, chestnut flour, wheat flour, salt and milk until smooth. From the dough in a frying pan with clarified butter gradually bake out pancakes.

Serve the chestnut pancakes with the pear gratin.
