For the chia porridge, coarsely dice the melon, puree and mix with the raw cane sugar and the chia seeds, stir occasionally and leave to infuse for at least an hour, preferably overnight in the refrigerator.

Bring the oatmeal to a gentle simmer with the milk and water over medium heat, turning down a bit after a few minutes. Add coconut flakes and let thicken to desired consistency. Stir occasionally.

Stir the coconut blossom sugar and the melon puree with chia into the finished porridge and allow to steep again briefly. Add a few melon pieces on top.

Preparation Tip:

If you like, you can also put a dollop of the chia melon puree on top of the chia porridge, then add a few melon pieces on top and sprinkle with coconut flakes. The amount of sugar varies according to the sweetness of the melon.
