Cut the chicory stems in half lengthwise and blanch in boiling hot salted water for one minute. Lift out and drain well.

Peel the garlic clove and chop very finely. Put them in a pan with the cream and the sour cream and cook on medium heat for ten minutes. Season the sauce with salt and pepper.

Add the blanched chicory, mix thoroughly and just heat well. Arrange in a platter and sprinkle with parsley.
