For the cinnamon rolls, melt the butter, stir in the sugar and spices and let cool until the mixture is no longer liquid.

Carefully unfold yufka dough sheets, cutting a few layers at a time into strips and then into small triangles.

Place each of the remaining dough on a slightly damp kitchen towel and cover with a second slightly damp kitchen towel to prevent it from drying out and becoming crumbly.

Brush the triangles with the butter and roll them up from the shorter side. Bake at 200 °C for about 10 minutes until crispy.
