For the very simple to prepare cinnamon stars, first beat the egg whites until stiff, gradually sifting in the powdered sugar and vanilla sugar. Remove about 1 cup of the snow and put it in the refrigerator.
Fold the cinnamon and 300 g almonds into the remaining snow. Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
Now line a baking tray with baking paper and sprinkle the work surface with the remaining almonds. Roll out the dough on it to a thickness of about 7 mm and then brush it thinly with the chilled beaten egg whites.
Prepare a bowl of cold water (always dip the mold before cutting) and cut out stars.
Place the cinnamon stars on the baking tray and bake in a preheated oven at approx. 130 °C (medium heat) for 25 minutes.

Store your cinnamon stars in a metal tin, this way you can enjoy your cookies for an extra long time.
