Instructions:

For the pesto, finely grind all the ingredients.

Cut out small balls from the melons (best with a Parisienne cutter).

Finely mix the remaining pulp with the maple syrup and lemon juice and mix the melon balls with it.

Divide the melon balls among dessert bowls, arrange the lemon sorbet on top and garnish with the pesto.

Preparation Tip:
