For the cream of pumpkin soup, chop the onion and garlic. Cut pumpkin and potato into small pieces.

Heat oil in a large pot and lightly sweat the onion pieces and garlic. Pour in the soup and bring to a boil. Add the pumpkin and potato pieces and simmer everything for 20 minutes.

After the 20 minutes, puree the soup. Stir in the sour cream or whipped cream well and season with salt.
