For the curry vegetables with rice, first wash the rice, drain and lightly fry in butter. Add a little water and cook until soft (keep adding water).

For the vegetables, sauté the finely chopped onion in coconut oil until translucent. Cut the yellow beet into fine strips and fry. Cut the sugar snap pea pods into small pieces – add and continue to roast.

Mix in the chopped lemongrass, curry and peanut butter and pour in coconut milk. Let simmer. Mix in the cooked rice and form balls with a ladle – serve.
