For the vegetable pan, wash the melanzani and zucchini and cut into bite-sized cubes. Clean the mushrooms and quarter them (leave the small mushrooms whole).

Peel and finely dice the onion. Heat the oil in a pan, add the melanzani pieces and saute for 5 minutes, then add the zucchini pieces and saute together for another 5 minutes.

Now add the mushrooms and continue to sauté, covered, for about 10 minutes over medium heat. Turn the vegetables several times in the pan.

Finally, season with herb salt, pepper and coriander. Sprinkle the parsley on top and serve. This is best served with fresh baguette bread.

Preparation Tip:

The vegetable pan can still be supplemented or varied as desired. For example, add another egg or cheese on top. Instead of cilantro, you can use parsley or other herbs to taste.
