Duck Breast Glazed with Honey

Thoroughly rub the duck breasts with a marinade of salt, juice of one lemon, honey and pepper. Cover and marinate for at least 2 hours.

Remove the fillets from the marinade and set aside. Dab fillets thoroughly with kitchen roll, roast in 1 tbsp. oil in a coated (!) frying pan first with the skin side down for about 7 minutes, turn to the other side and roast for another 5 to 7 minutes.

Rinse lettuce leaves, shred into bite-sized pieces, divide evenly among 4 plates.

Remove the skin from the shallots and cut them into small cubes. Remove skillet from stove, remove duck breasts and set aside. Add the shallots to the pan, which has cooled down a little, and stir in the juices, adding 2 to 3 tablespoons of water and deglazing with the vinegar. Transfer to a bowl, add remaining lemon marinade, whisk in remaining 3 tbsp oil. Season to taste, pour over salad.

Cut duck breast fillets into slices, arrange on leaf salad. Sprinkle with currants and coconut flakes.

Serve with: fresh white bread
