Instructions:

Sear duck breast unseasoned (important otherwise it will be dry) initially on the fat side (in the dry hot frying pan), then turn to the other side and fry this side until crispy. (each side about 8-10 min).

Then season with pepper. Please do not season the duck breasts themselves with salt.

Remove the duck breasts from the roasting pan and set aside, covered.

Add orange juice and whipping cream and season with salt, pepper and chicken seasoning.

Slice open the duck breasts – add any juices that escape to the sauce – and perhaps add some sauce thickener.
