For the ful medames, soak the brown beans overnight. The next day, simmer gently on low heat for 45 minutes.

In the meantime, chop the onions and the clove of garlic and fry them in a little butter until golden brown. Cut the tomatoes into small pieces or roughly grate them cut into halves. This way, the peel remains at the end, which would otherwise settle in the sauce.

Mix onion, garlic and tomatoes, season with salt and pepper and a little cumin to taste and simmer gently for about 20 minutes.

At the end of the cooking time, lightly mash the brown beans with a fork and mix them with the tomato sauce that has thickened in the meantime.

Arrange the ful medames and serve with fresh pita bread.

Preparation Tip:

Ful Medames is the national dish in Egypt. It is usually accompanied by a leaf salad with tomatoes, cucumbers, peppers and some finely chopped onions. It is marinated with olive oil and lemon and seasoned with salt and pepper.
