If there are beetles or dried spots on the flower umbels, remove them only carefully – in no case should the umbels be washed properly! Then carefully detach the flowers from the stems and place them in a household 10-liter bucket.

Mix the sugar with water in a large pot, add the sliced lemons and oranges. Boil the sugar water with the lemons and oranges for about 5 minutes until the syrup becomes clear. Remove the pot from the heat and allow the syrup to cool slightly. Stir in the citric acid and the hermitage aid, leaving the lemons and oranges in place.

Pour the syrup over the flowers and mix everything well. Close the bucket tightly either with a lid or with cling film. Leave to infuse in a cool, dark place for about 4 days.

To make the syrup easier to bottle, first filter it into a larger container with a beak and then pour it through a funnel into the bottles (previously rinsed with alcohol and clean). Immediately close the bottles and store them.

Preparation Tip:

To keep the syrup clear, it must be filtered: For this purpose, you can use a pair of ladies' pantyhose, a very fine sieve, a sheet or a coffee filter.
