A great noodle dish for any occasion:

Cut the rice noodles into pieces and pour boiling hot water over them to soften and separate the layers. Drain in a colander. Rinse wheat flour noodles with hot water and drain.

Cut the pork first into narrow slices, then into tender strips. Remove the crab tails from the shell and gut them, if you can’t get small crab tails, you will have to cut large ones into pieces. Rinse the bean sprouts. Crush the garlic, rinse the salted beans and mash or finely chop them with a fork. Bean sauce can be used as it comes out of the can.

Just before eating, heat a wok, pour in the oil and cook the garlic in the hot oil at a low temperature, stirring constantly, until it begins to take on a flat color.
