Cut pork against the grain into narrow slices (2 cm x 2 cm x 0.2 cm), then marinate in 1 tsp sugar, a quarter tsp pepper, 1 tsp dark soy sauce, 1 tsp sherry, 1 tsp potato flour and 1 tbsp water for about 15 min. Rinse zucchini and cut into narrow slices (maybe cut in half lengthwise).
Heat wok, pour in 2-3 tbsp oil and toss around. Add ginger and garlic. Add the meat and stir-fry briefly. Drizzle in the sherry on the side and stir, add the zucchini and stir. Sprinkle salt, 1 pinch of sugar and scallions and bring to the table hot. The zucchini should still have bite.
It goes best with chin. Fragrant rice on the Asia store.
Our tip: Zucchini are tender in taste and therefore also well suited for children.
