For the garlic soup, finely chop the garlic and onions, heat the butter, sauté briefly, deglaze with white wine and boil down. Add beef broth and simmer for a quarter of an hour.

Stir in half of the whipped cream. Puree the soup, season with salt, pepper and chopped parsley.

Whip the remaining whipped cream until stiff and fold into the soup before serving. Serve with toasted bread cubes.

The garlic soup also tastes very good with brown bread croutons.
