Half a kilo (500 g) of layered cheese -if possible from the farm shop- on a sieve to drain for one night. Then mix the cheese with one and a half teaspoons of baking soda and let it rest for 120 minutes. Meanwhile, it is stirred with a mixer or a fork on a low flame until it looks like cream pudding and there are no more lumps. Then taste the cooked cheese with a pinch of salt and about 40 g of butter. Cooked cheese is accompanied by black bread, caraway seeds and music (“music” in the Odenwald region means: chopped onion dressed with vinegar and oil).
