For the ham fritters, cook the fritters in salted water according to package directions. Strain the Fleckerl, rinse in cold water and leave to cool.

Cut the ham into cubes, separate the eggs and beat the egg whites until stiff. Mix yolks with butter until creamy, add sour cream.

Add ham, whipped cream and grated cheese, stir in Fleckerl, fold in the snow carefully. Season with salt and pepper.

Grease a baking dish and sprinkle with breadcrumbs. Pour in the mixture and bake in a preheated oven at 180 °C top/bottom heat for about 1 hour.

Arrange the ham fritters and serve.

Preparation Tip:

For the Schinkenfleckerl you can also use another cheese. Try the Schinkenfleckerl once with smoked meat. This gives a fine spicy note.
