Remove the peel from the carrot and celery and cut into thin slices at the beginning, then into strips. Rinse and core the apple and cut the flesh into strips. Drain the sauerkraut and mix it with the carrot, celery and apple strips.

Cut the toast in half across the corner to make triangles. Heat the butter in a non-stick frying pan. Pluck the rosemary needles from the sprigs and add to the butter form. Peel the garlic, cut it off and add it to the butter.

Fry the toast wedges in the hot butter on both sides and season with iodized salt and ground pepper.

Mix the sauerkraut mixture with sour cream and season the lettuce with iodized salt, ground pepper and sugar.

Spread the ham slices evenly, spread the filling evenly on them and roll them up. Divide the ham rolls evenly between the two plates and place 3 pieces of toast on each.
