Instructions:

1) Mix egg yolks, half of the sugar, milk and flour until smooth. Allow to swell for 1 hour. Bring all the ingredients for the compote (except the powdered sugar) to the boil with 80 ml of water, gently simmer for about 8 min until the fruit is half broken. Put in a cool place. Whip egg whites with remaining sugar to egg whites, fold into egg yolk mixture. Stir in melted butter and raisins. Heat butter and olive oil in a large frying pan. Pour in batter to a height of about 1/2 cm. Toast at low temperature for 3 min on each side. Tear into irregular pieces with two forks in the frying pan. Sprinkle with powdered sugar and serve with stewed plums.
