Instructions:

For the lemon muffins, preheat the oven to 170 degrees top and bottom heat. Place paper molds in muffin tray.

Mix oil, cream cheese, sugar, vanilla bean, lemon zest and juice and eggs until creamy. Mix flour with baking soda and salt and fold into creamed mixture.

Pour the batter into the paper pans and bake for about 25 minutes. Let cool.

For the lemon cream, mix cream cheese, sugar and lemon juice until smooth.

Place a dollop of the lemon cream on each muffin and sprinkle the lemon muffins with the grated lemon zest.

Preparation Tip:

If you like, put an almond on each of the lemon muffins.
